Preparing the Prawns: The prawns are cleaned, deveined, and washed thoroughly. They are then marinated with salt, turmeric powder, and red chili powder, and left to rest for an hour.
Cooking the Prawns: The marinated prawns are fried in mustard oil until they are cooked through and slightly crispy. They are then set aside.
Spice Mix Preparation: Mustard seeds, fennel seeds, fenugreek seeds, cumin seeds, and coriander seeds are roasted and ground into a fine powder. This mix is combined with black pepper and asafoetida.
Sautéing: In a large pan, mustard oil is heated, and ginger-garlic paste is sautéed until aromatic. Green chilies and curry leaves can be added for extra flavor.
Combining Prawns and Spices: The fried prawns are added to the pan, followed by the prepared spice blend. Everything is mixed thoroughly and cooked for a few minutes to ensure the spices are well incorporated.
