Chicken Pickle is a spicy and savory Indian condiment that combines tender pieces of chicken with a robust blend of spices. This pickle is known for its rich flavors and is often enjoyed as a side dish or accompaniment to meals.
Preparation:
Preparing the Chicken: Clean the chicken pieces and cut them into small cubes. Marinate with salt, turmeric powder, and red chili powder, and let it rest for about 30 minutes.
Cooking the Chicken: Heat mustard oil in a pan and fry the chicken pieces until they are cooked through and slightly browned. Remove and set aside.
Spice Mix Preparation: Roast and grind mustard seeds, fennel seeds, fenugreek seeds, cumin seeds, and coriander seeds into a fine powder. Mix in black pepper and asafoetida.
Sautéing: In the same pan, heat more mustard oil and sauté ginger-garlic paste until fragrant. Add green chilies and curry leaves for extra flavor.
Combining Chicken and Spices: Return the cooked chicken to the pan and add the prepared spice mix. Mix well to coat the chicken pieces evenly with the spices.
Adding Acid: Pour vinegar or lemon juice over the chicken pickle to enhance tanginess and aid preservation.
Maturation: Transfer the pickle to sterilized jars and allow it to mature for a few days in a cool, dry place. This allows the flavors to meld together.
