Preparation:
Preparing the Jujube Fruits: Wash the jujube fruits thoroughly. If they have seeds, remove them and cut the fruits into halves or quarters.
Boiling and Soaking: In a pot, boil water and add the jujube fruits. Let them boil for a few minutes until they start to soften. Drain the water and repeat this process once more.
Making the Syrup: In another pot, combine water and sugar in a 1:1 ratio (adjust according to sweetness preference). Add cinnamon sticks, cloves, and cardamom pods to the syrup.
Cooking the Jujube with Syrup: Add the boiled jujube fruits to the syrup. Simmer gently until the fruits become tender and translucent, and the syrup thickens slightly.
Adding Flavors (Optional): For additional fragrance and flavor, add saffron strands and a few drops of rose water towards the end of cooking.
Finishing Touch: Stir in lemon juice to balance the sweetness and enhance the tartness.
